Probably "The Man In Me" by Say Anything. Wow, need to find this, I love Say Anything, but I've heard only one cover song by them...they covered ODB's Got Ya Money Worst cover ever. I checked it out, I wasn't too fussed on it. Although the pace of The Man In Me is essential for me.

I think it's a pretty good punk cover, they've at least tried to do something a little interesting instead of just doing a straight cover of it.

Didn’t realise that Death Is Not the End by Nick Cave and friends was a Dylan cover until I saw another cover of it on a Dylan in the 80s complition Craig Finn was also on...that wins. That or ISIS by Jack White or Knocking on Heaven’s Door by Antony & the Johnsons, off the fantastic I’m Not There soundtrack...THS are on there too

Jimi's All Along the Watchtower is the runaway winner in my opinion, but for the sake of originality I'll go with Mr. Tambourine Man by The Byrds, who have a few other great ones.

There is something about the opening notes of Jimi's Like A Rolling Stone at the Monterey Pop Festival, 1967 that always blew my mind --- as far as I can tell he's creating rhythm out of a single chord, which shouldn't be possible, but as far as that electric thing in my spine is concerned, he does it.
The other one I'm really fond of is Titus Andronicus' (I'm) Like A Rolling Stone, which is obscure, too long, obsessive, and unembarrassed in a way that I seriously love and respect.

Jimi at Monterey - Like a Rollin' Stone. He got sloppy with his finale of Wild Thing but he gets a pass. Now don't judge the smitten, but I love Shawn Colvin's You're Gonna Make Me Lonesome among all her other covers. She even covered Westerberg for Crying out loud. I'd wax her car if she asked me to.
