though i usually don't go with the obvious choice got to go with:
All Along the Watchtower - Hendrix.
not only the favorite Dylan cover but has to be the greatest cover in the history of RnR. this is one of the greatest rock songs ever........
then there is the cover from the Dylan 30th anniversary show with Neil Young and Booker T. and the M.G.'s.

i think it has to be Jimi's along the watch tower, but hostilematt is right, Neil's blowing in the wind from weld is very close.
