I was born in the Middle East, surprisingly enough! Whilst there are many aspects of modern Arab society that I find problematic, I also feel a strong pull to the Middle East. Taste for me is a particularly evocative sense, and a lot of Middle Eastern culture is tied to food and feasting. I also hope to become more knowledgable about medieval and early modern cooking. I need to track down some good academic texts.

So, SAG, what do you think is the key to successful breadmaking? The key is study and practice. Start with a good textbook style book, don't start with a general cookbook. If you start there, they will tell you things like if you don't whisk the yeast in with the flour, and you dump a big pile of salt on your yeast, you could kill your yeast. I'm starting to get kind of experimental with the bread... I don't make it as much as I should/would like but I bought some yeast from the beer store that I am going to experiment with.
